Food Physics - The Momentum is Building!

Carla Ramsdell had what she referred to as a “decent week” last week. In addition to her OpEd that was accepted in the Charlotte Observer and Raleigh News & Observer, her application for the NC-FEW (National Collaborative for Food, Energy, and Water Education) Invited Workshop, Advancing FEW-Nexus-based Education through Research, was accepted! The workshop will be held in Arlington, VA on May 11 & 12. 

Ramsdell’s proposal, Equipping the Energy Efficient Cooking Laboratory for Widespread "Digestible" Research and Impact, has been selected as an awardee for AEC Research Equipment Grants. She was awarded $4,000 which will be added to the recent REI grant of $22,000 to redesign her lab / remote cooking classroom in the summer of 2023. 

Garwood 218 will be converted into a research and educational space for improving literacy about the potential of the food system to help mitigate climate change. Additionally, through the Cooking with Purpose multidisciplinary program on campus, this space will help provide education to students who struggle with food insecurity by empowering them with strategies to help transform the ingredients provided in our 13 food pantries across our campus into delicious meals! We cannot wait to see the end result of the new Energy Efficient Cooking Lab and Virtual Classroom!
