Both water and alcohol molecules have -OH groups that bond easily with hydrogen. The Na and Cl preferentially bind with the water molecules, forcing the alcohol out of the solution. This causes two layers to form. This "salting out" technique is commonly used to remove organic molecules from an aqueous solution.
